Delicious Dairy Free Coffee Creamer
Let's talk about iced coffee, shall we?
Is there anything more delicious than a cold, creamy glass of it on a hot summer day? I think not.
I've been my own homemade cold brew coffee for two years now and while it is strong and absolutely delicious, I was missing my cream.
Before I got married and became somewhat of a health nut, I was a venti iced coffee with cream kinda girl. I liked it milky, I liked it sweet, and I liked it often. However, things have changed quite a bit since then - There would be some serious repercussions if I downed one of those venti bad boys now. Yikes.
Nevertheless, my love for creamy iced coffee remains.
I have searched high and low for an alternative to whole milk in my coffee. I've tried almond milk, coconut milk, hemp milk, soy milk oat milk, rice milk, cashew milk... I think you get the picture. I even tried a few store-bought dairy free creamers but they were always too sweet and full of preservatives.
Then, one day I had an idea. Why don't I try to make my own coffee creamer?
Duh, Rachel. I'll never know why it took me so long to concoct this life-changing recipe.
It's creamy. It's sweet. It doesn't curdle in the coffee. No processed sugar. No preservatives. AND it's dairy free and full of good fats.
Can I get an amen?!
If you're in that same "I need cream in my coffee but my body will hate me" boat, this recipe is for you. I feel your pain, friend, and I'm here to provide a remedy.
Let me tell you how the magic happens.
First? The ingredients.
You'll need one can of coconut milk (Go for the full-fat, my friend. Just do it.), almond milk, honey, and sea salt.
(Side note: This recipe requires CANNED coconut milk. You can use boxed coconut milk if you wish, but it has a much thinner consistency and tends to curdle in coffee. Nobody wants chunky coffee!)

So what you're going to do is simply dump all the ingredients into your blender and blend on high until the mixture is nice and smooth.
Next, fix yourself a cup of coffee add a little homemade creamer (or a lot, I won't tell) and enjoy.

Delicious Dairy-Free Coffee Creamer
1 can full-fat coconut milk
2 cups almond milk
1-5 tablespoons raw honey (depending on how sweet you like it)
pinch of sea salt
Optional: vanilla, cinnamon, cocoa powder, or anything else that sounds yummy!
Add all ingredients to a blender and blend until smooth. Enjoy in hot or iced coffee. Store in a glass jar in the refrigerator for 3-5 days.
